VE Tuning Q - Setting Target AFR

On D, all the mutlipiers on my stock tune are set to 1.0, Where am I supposed to see the target AFR at? Its just a multipier vs. rpm. If the line on the graph represents AFR wouldn't I just make the multiper value the AFR I want? Why are they all set to 1 stock?

If you guys could give me a walk though of what tables to use that would be great since this...

didn't really help me all that much. To be honest I have no clue where the "Commanded AFR Lo Res" table is, but I'm sure its looking right at me and laughing.
